  • Olive oil 7 ½ tbsp 100 g
  • Onion, chopped 840 g ≈ 5 ¼ cups
  • Red bell pepper, sliced 1.4 kg
  • Garlic, minced 28 cloves 85 g
  • Ground cumin 4 ½ tbsp 30 g
  • Paprika 4 tbsp 30 g
  • Canned crushed tomatoes 3.5 kg
  • Canned chickpeas, drained, rinsed 1.1 kg
  • Salt 2 ½ tsp 15 g
  • Black pepper 1 tbsp
  • Eggs 42 large 2.1 kg
  • Feta cheese, crumbled 350 g ≈ 2 ¼ cups
  • Fresh parsley, chopped 70 g ≈ 1 ¼ cups
  • Whole wheat bread, toasted 14 slices 450 g

Steps

  1. Heat the oil in a 20–25 cm skillet over medium heat and cook the onion and bell pepper for 5 minutes, until softened.
  2. Add the garlic, cumin and paprika and stir for 30 seconds.
  3. Add the crushed tomatoes, chickpeas, salt and pepper and simmer for 4 minutes, until slightly thickened.
  4. Make 3 wells in the sauce with a spoon and crack an egg into each.
  5. Cover and cook over medium-low heat for 5–7 minutes, until the whites are firm and the yolks are cooked the way you like them.
  6. Sprinkle with the feta and parsley and serve with the toast.

Tip: Use a lid that fits the skillet: the trapped steam is what cooks the tops of the eggs.
